Today’s post is about Pie.

And, since I often preach that you shouldn’t always focus on your music when you are online and you can always be diverse…. This is a post regarding my second love: Food.

This pie recipe was taught to me by my father, Gordon Hyatt, who is a masterful chef.

It’s easy to make and takes minutes to assemble.

So, take a break from music marketing and hit the kitchen!

Start Your Oven:

Preheat oven to 350 degrees

Pie Ingredients:

Pie Crust:

  • Frozen deep-dish pie crust (or homemade)

Pie Filling:

  • 2 1/2 – 3 cups blueberries OR 4-5 assorted apples (peeled and thinly sliced)
  • Juice and zest of 1 lemon
  • 1/4 – 1/2 cup sugar
  • 1-2 tablespoons cornstarch (or flour)

Pie Crumb Topping:

  • 1 stick butter (frozen or very cold)
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon fresh nutmeg (grated)
  • Zest from 1 lemon

Whipped Cream (optional):

  • 1 pint heavy cream
  • Splash of vanilla extract
  • Dash of maple syrup

For this, my friend made Julia Child’s recipe (pictured). Google it; it’s everywhere.

The Pie Filling:

2 1/2 – 3 cups of blueberries or 4 -5 assorted apples peeled and sliced as thin as you can get them!

Juice & zest of 1 lemons

1/4 – ½ cup sugar (if you want it more tart use less)

1-2 tablespoons cornstarch (use flour if you don’t have it’s okay!)

zest both lemons (remember, don’t grate the white of the lemon, just the yellow exterior flesh)

you will use half for the filling and half for the crumb topping – so set half aside!

juice 1 lemon and combine juice, half of the zest, sugar, and cornstarch with blueberries, –  toss lightly together in a bowl – use your fingers. Don’t mash those gorgeous berries or apple slices up

and transfer to pie crust (pile it in; it’s ok if it is higher than the edges of the pie)

Pie Crumb Topping:

1 stick butter (frozen or very cold)
1 cup flour w/ 1/2 teaspoon salt (you can use all purpose gluten-free flour if that’s your thing)
1 cup sugar
1 teaspoon fresh nutmeg – grated
zest from 1 lemon

dice the butter into small cubes

toss into a bowl with flour, sugar, nutmeg & zest – knead this like play dough (use your hands and manipulate till it forms a crumbly consistency)

Drizzle crumb topping over blueberries and cover them completely, “sealing” the crumb topping to the edges of the pie crust.

 

Bake Pie:

for 35 – 55 minutes until the topping is golden brown

serve with ice cream or whipped cream

Recipe For whipped cream

just whip 1 pt heavy cream with a splash of vanilla and a dash of maple syrup

Don’t overwhip or you will get butter.

Years ago, I was on a unique all-female panel at SXSW, and it may have been the ONLY panel in the event’s history to serve pie.

The all-woman SXSW 2010 panel, “The Power Pie,” used the PIE metaphor to illustrate the formula for building a successful music career: setting clear goals (the filling), creating a timeline (the crust that holds it together), and identifying team members who can help (the bakers). Together, these ingredients form the perfect “Power Pie” to execute an artist’s business strategy.
